Ingredients
- 1/2 Cup Yellow Onion Diced
- 1 Yellow Squash Cut into chunks
- 3 Cups Carrots Cut into chunks
- 3 Tbsp Avocado oil
- 2 Cloves Garlic Chopped
- 2 Tsp Turmeric Ground
- 1 Tbsp Ginger Grated
- 1 Bay Leaf
- Vegetable Broth To thin out soup as needed
- 1/2 Cup Califia Farms Heavy Cream
- Squeeze Raw Unfiltered Honey
- Pepper & Salt To taste
Instructions
- In a medium deep pot, sauté the onions, the squash, and the carrots.
- Add the garlic, grated ginger, turmeric and the bayleaf. Then sautee for another 2-3 minutes.
- Add the vegetable broth and let simmer until all the vegetables are softened.
- Transfer into the Vitamix and a blend until silky smooth.
- Add the heavy cream, honey and blend one more time.
Sprinkle with cinnamon and serve with warm sour dough bread.
