Ingredients
Seared Salmon Salad
- 10-12 oz Ora King Salmon
- 1/2 cup Roasted Sweet Potato Small Cubes
- 1/4 cup Almond Slivers Toasted
- 3 tbsp Roasted Pumpkin Seeds
- 2 tbsp Pomegranate Seeds
- 2 tbsp Dates Chopped
- 1/2 cup Cucumber Chopped
- 1/2 cup Tomato Chopped
- 1/3 cup French Feta Cheese
- 2-3 cups Bibb/Romaine Lettuce Blend
Shallot Cider Vinaigrette
- 1 Shallot Minced
- 1/8 tsp Dijon Mustard
- 3/4 cup Apple Cider Vinegar
- 1 tbsp Date Syrup, Maple Syrup or Honey
- 1/2 cup Avocado Oil
- Salt & Pepper To Taste
Instructions
For the Salmon
- Season the salmon with salt and pepper.
- Sear or blacken over a medium/high heat until cooked to your desired temperature.
For the Shallot Cider Vinaigrette
- Combine all the ingredients above and slowly whisk in the avocado oil, until you reach a nice emulsion. If you have a mini food processor, that’s even better.
