Seared Salmon Salad

Ingredients
  

Seared Salmon Salad

  • 10-12 oz Ora King Salmon
  • 1/2 cup Roasted Sweet Potato Small Cubes
  • 1/4 cup Almond Slivers Toasted
  • 3 tbsp Roasted Pumpkin Seeds
  • 2 tbsp Pomegranate Seeds
  • 2 tbsp Dates  Chopped
  • 1/2 cup Cucumber Chopped
  • 1/2 cup Tomato Chopped
  • 1/3 cup French Feta Cheese
  • 2-3 cups Bibb/Romaine Lettuce Blend

Shallot Cider Vinaigrette

  • 1 Shallot Minced
  • 1/8 tsp Dijon Mustard
  • 3/4 cup Apple Cider Vinegar 
  • 1 tbsp Date Syrup, Maple Syrup or Honey
  • 1/2 cup Avocado Oil 
  • Salt & Pepper To Taste

Instructions
 

For the Salmon

  • Season the salmon with salt and pepper.
  • Sear or blacken over a medium/high heat until cooked to your desired temperature.

For the Shallot Cider Vinaigrette

  • Combine all the ingredients above and slowly whisk in the avocado oil, until you reach a nice emulsion. If you have a mini food processor, that’s even better.
